Baker’s percentage expresses every ingredient relative to flour as 100%. Hydration is the percentage of water compared to flour by weight. When you know flour and water, we divide water by flour and multiply by 100. When you know flour and a target hydration, we multiply flour by that percentage to get total water weight.
